1 cup long grain rice – cooked
4 chicken breasts halves
1/4 cup flour
1/4 tsp salt
1/8 tsp pepper
1/4 cup butter
1/4 cup lemon juice
Diced peppers (red and green)
pineapple chunks
Begin cooking rice. Cut chicken into 1/2 in cubes. In bowl combine flour, salt, and pepper. Add chicken to coat. In medium skillet, melt butter over medium heat. Add chicken Add chicken and brown on all sides about 8 minutes. Add sweet and sour sauce and one bottle of water and stir until mixture thickens. Serve over hot rice. Makes 2 to 4 servings.
Megan Notes: I use Kikoman sweet and sour sauce and then fill out the same bottle with water.
