Baked Potato Soup


1/2 cup butter
1/2 cup flour
4 large baking potatoes-already baked and cubed
4 green onions, chopped
12 slices of bacon, cooked crisp
1 cup (8 oz.) sour cream
5 cups milk
1 cup water
3/4 tsp. salt
1/2 tsp. pepper
1 1/2 cup shredded cheader cheese
1 tsp. chicken soup base, or 1 bolion cube

Melt butter, add flour, stir and cook for 1 minute. Add milk, water, soup base, salt, pepper and cubed potatoes. Cook on medium-low until thickened. You can either serve the soup like this with the cheese, bacon, green onions and sour cream on the side for people to add on top of their soup. OR you can throw it all in and serve it mixed together.
Note: I usually make extra whenever I'm baking potatoes, that makes this soup very quick to make.
